I don't understand why we couldn't have just done the loan with an option to buy without Olympiakos as a middle man.

 

Because there's a risk that he may not pan out. If that happens, he becomes an Olympiakos player. Monaco were, it seems, not willing to take back someone who may or may not succeed. It's a win-win-win deal.

 

Monaco want rid of a player whose attitude is too big for his boots: Win for them.

Everton want the chance to turn him around. One year loan to see whether this happens. If he does well, buy him; if he fails, let him return: Win for us.

Olympiakos stand to make a profit if Everton keep him and to get the second chance at turning him around if not: Win for them.

He was only on loan at Monaco, he's not their player so wouldn't be going back there. Other than that, you're right.
